Orange-Dijon Salmon

Talk about a refreshing meal!  And super light too!  Perfect for a warm summer evening.  Perfect for the beginning of bikini season.  Perfect for shedding those last pesky five pounds (did I say five?  I mean....well, never mind!).  The simple fact is that this salmon is a fabulous recipe that comes together quickly; it tastes good, it's pretty on the plate, it's kind to the waste line, and it's pretty easy on the pocketbook, too!  Enjoy!

1 tablespoon Dijon mustard
1 tablespoon whole-grain mustard
1 tablespoon orange marmelade
4 6-ounce salmon filets, skin on

Preheat oven to 375.

Mix mustards and marmelade together.  Place fish skin side down in a baking dish.  Brush with sauce.  

Bake 12-15 minutes.

I served this fish over a bed of couscous (to which I added sauteed shallots, fresh parsley, 2 tablespoons lemon juice, 1 teaspoon lemon zest, and salt & pepper).

Serves 4.
