Snap Pea & Edamame Saute

Talk about a fast and easy side dish!  This is so simple you can whip it up in seven minutes or less and it's i with flavor and nutrients...  Needs no more introduction....  Enjoy!

2 tablespoons olive oil
1 large or 2 small shallots, thinly sliced
2 garlic cloves, minced
1 8-ounce package shelled edamame
1 10-ounce package sugar snap peas
1/2 teaspoon salt
1/4 teaspoon pepper

In a medium skillet, heat the oil over medium-high heat.  Add the shallots and cook until soft, about 3 minutes.  Add the garlic and cook until aromatic, about 30 seconds.  Add the edamame, snap peas, salt, and pepper.  Cook for 3 minutes, until warmed through.

Serves 4.
