Screamin' Sour Cream

1/2 cup sour cream
2 tablespoons hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder

Whisk all ingredients together in a small bowl.  Cover and refrigerate at least 30 minutes.

Serve with tacos, burritos, fajitas, or any of your favorite Mexican dishes!!

The Best Marinade for Flank Steak (or anything!)

Who doesn't love having a great marinade recipe in your hip pocket?!  Especially during prime grillin' season!  This recipe is perfect for flank steak (a tough cut of beef which needs some help to tenderize and add in delicious flavor) but works just as well on any type of meat you'd like to serve up this summer....and let's not kid ourselves, my family grills year-round!

3/4 cup olive oil
1/4 cup honey
1/4 cup soy sauce
2 tablespoons balsamic vinegar
1/8 teaspoon cloves
1/2 a small onion, chopped
1 1/2 teaspoons ginger

Place all ingredients in a blender and let 'er go until smooth.  Play around with different oils and vinegars depending on what you have on hand.  Don't worry about whole or ground cloves and ginger...it's all gonna get blended up no matter what!

Marinate desired meat or poultry 24-48 hours in the refrigerator (and yes, you need that time for a flank steak!).  Let the meat rest on the counter for 30 minutes to an hour before grilling (or broiling).  Baste with marinade during grilling/broiling until done to your likeness!

Island Spice Adobo

My husband and I honeymooned in Jamaica just over four years ago.  While basking in the sun and sipping refreshing Caribbean libations, we both fell in love with the jerk-style sandwiches available at the beachside snack carts at our resort.  With chicken, pork, and even seafood options there was a ton of variety and not worry of eating the same old thing day after day.  After all, when you're laying on the warm white sand, who wants to pack up and go find lunch?!  Use this seasoning on your choice of meat or fish (or even on island-style veggies) for a taste of the Caribbean!

1/8 cup garlic powder
1/8 cup onion powder
1-2 tablespoons cayenne
2 tablespoons mustard powder
1 tablespoon ground ginger
1 tablespoon all-spice
1/2 teaspoon ground coriander
1 teaspoon curry powder
1 tablespoon dried thyme
2 teaspoons dried orange peel, pulverized
1 teaspoon dried lemon peel, pulverized
1/4 cup brown sugar
2 teaspoons freshly ground black pepper
1/2 cup salt

Mix all ingredients together.  Store in an air-tight container in a cool, dry place out of the sunlight.

Makes about 1 3/4 cups.

Smoky Chipotle Adobo

This spice rub is nothing short of amazing!  I made it for a specific dish quite some time ago, not bothering with the fact that the recipe says it'll yield 1 1/2 cups...way more than I needed for my recipe.  No matter; this smoky combo is perfect on fish, chicken (think fajitas!), beef, pork...anything really!  I did have to make a special trip to the Mexican market near my house for dried chipotles, which I ran through my mini food processor, since I couldn't find the chiles already ground...but that's ok!

1/3 cup onion powder
1/8 cup garlic powder
1/2 cup salt
1 teaspoon black pepper
2 teaspoons oregano (Mexican, if you can find it)
2 teaspoons sugar
1 teaspoon paprika
1/4 to 1/3 cup ground chipotle chile

Mix it up.

Store in an airtight container in a dry place, out of the sunlight.

Valentine's Day Dinner


Normally, Hubs and I celebrate Valentine's Day by going out to dinner.  We exchange cards and he normally brings me flowers and I make him a chocolate chip cookie cake.  My family grew up with Valentine's Day presents, but Hubs's family didn't do that, so I was willing to forego that exchange of gifts once we were married.  But I digress.  So, yes, normally we go out for a fancy-schmancy dinner; and that's it.  After all, although we've been together (in some capacity) for the last six V-Days, we've only actually been together for two.

Well, this year, Hubs took me out to dinner Friday night so we could celebrate Valentine's Day over a weekend and indulge just a little bit more.  But given the fact that we'd actually be together on the day, I wanted to do something special Monday night as well.  I couldn't just forget the whole day, so I planned a special meal of  filet mignon, roasted potatoes, and Caesar salad...until I remembered we were going to a steak place for dinner Friday night.  I needed to do something different.  And I'd like to keep it relatively healthy since we're trying to get back to South Beach Diet type foods now that I'm done with nursing school.

So, I did what I always do when I'm in a cooking pickle!  I asked Mama A for some ideas.  She gave me two wonderful meal plans, complete with appetizer and dessert choices, plating diagrams to make the meal pretty on my dishes, and an offer to come help me prep!  I am saving one meal for our anniversary in April, and the other I'll share with you here.  It was super easy, super healthy, and super pretty....oh yeah, and super duper tasty!

Romantic (& Healthy) Valentine's Dinner for 2

Menu:
Pan-seared salmon with black bean salsa
French-style Rice
Steamed asparagus with roasted red pepper rouille
Dark chocolate mousse with raspberries

Pan-Seared Salmon

1 (1 - 1 1/4 pound) salmon filet, skinned
1 T. unsalted butter
1 T. olive oil
1 clove diced garlicsalt and pepper pepper

Preheat oven to 425.  Divide filet into four serving portions; pat dry.  Allow salmon to come to room temperature, about 15 minutes.  Season with salt and pepper.

Heat butter, olive oil, and garlic in large heavy skillet over high heat.  Cook salmon 2 minutes on each side, until goden-bown.  Remove to heated baking sheet; bake in preheated oven 5-10 minutes.  Do not overcook as the salmon will be very dry.  Remove from oven, tent with foil.  Let stand 2-4 minutes before serving.

Black Bean Salsa

2 tomatoes, seeded and diced
1/2 C frozen white and yellow corn, thawed
1/4 C canned black beans, rinsed and drained
2 T roasted red pepper, diced (comes in a jar in my produce section)
2 green onions, thinly sliced
2 T canned chopped green chilies
2-3 cloves of garlic, minced
2 T cider vinegar
1/2 T olive oil
2 tsp. minced cilantro)
1/2 tsp. dried oregano
salt and pepper, to taste

Combine all ingredients and stir, adjusting seasonings to taste.  Let stand 30 minutes, refrigerate to store.  This is also good over chicken and with chips!

French-Style Rice

1 C. long grain rice
2 quarts chicken stock (or can use water)
salt and freshly ground pepper
1 T. butter
2 T. freshly minced parsley

In large pot, heat stock to boiling (this seems like ALOT of liquid, but it is a correct measurement for this recipe).  Add 1/2 teaspoon of salt and the rice; stir.  Boil uncovered 13-14 minutes, until rice is softened.  Drain in sieve or colander.  Place in heatproof serving dish, toss with butter and parsley, salt and pepper to taste.  Tent with foil, to cover, but not tightly.  You do no want the rice to steam.  May hold in 160 degree oven for up to 2 hours.  Stir before serving.

Steamed Asparagus

Simply trim one bunch asparagus to even length of each stalk.  Place in single layer in microwave safe dish with 2 T water, salt and pepper, a dash of lemon juice, and 1 clove diced garlic.  Cover with wax paper and microwave 3 minutes, until asparagus is crisp-tender.  Toss with 3-4 pats of butter.

Roasted Red Pepper Rouille

1 1/2 C mayonnaise
2 cloves garlic, minced
6 T pureed roasted red pepper
3 T apple cider vinegar
1/4 - 1/2 tsp. cayenne pepper, to taste
salt

Combine mayo, garlic, and pepper puree in food processor.  Slowly add vinegar.  Add seasonings and correct to taste. Refrigerate.  Rouille will keep 3 - 4 weeks in refrigerator.

Dark Chocolate Mousse

Go buy your favorite boxed mousse mix and top each serving with fresh raspberries just before serving!  Yes, I cheated on this one!

To plate your meal, arrange asparagus spears at the top of the plate so that half the stalks are facing one way and half the other.  Using a squirt bottle (like diners keep ketchup and mustard in - find one for $1 at Walmart), drizzle the rouille over the asparagus.  Pack hot rice in individual ramekins and invert over the center of the asparagus to form a round "pillow".  Place the salmon filet lengthwise so that one end is resting on the rice.  Top the salmon with salsa and garnish the empty space on the plate with extra rouille.  (Check out my pictures of that didn't make sense)!

Besto Pesto

We loosely follow the South Beach Diet in our house, so if you don't feel comfortable using some of the reduced fat ingredients I mention, feel free to substitute according to your own tastes and dietary needs! I am certainly not a registered dietician or nutritionist, and as such am not qualified to make recommendations for dietary requirements; however, I do have a passion for healthy eating choices and fresh ingredients! Bon appetite!!

Well, I've been looking out my window on an almost daily basis and drooling over that yummy fresh basil and trying to decide exactly what I should make first! When my in-laws were visiting over Memorial Day weekend, my MIL mentioned a recipe I'd shared that has since become one of her favorites: Baked Pesto Chicken! So, I decided that not only would I make the dish for dinner one night this week, but that I'd try my hand at homemade pesto. Note: if you live in a super hot environment (like Hampton Roads) and notice your basil is looking wilty, harvest it and place the stems in a glass of cool water; it'll perk back up in a couple of days! Read on for step-by-step directions...

To make the most amazing pesto you've ever tasted, gather fresh pesto, fresh garlic (yes, fresh makes a difference!), shredded parmesan cheese (or a blend of Italian cheeses like the one pictured below), pine nuts (they're in the Italian aisle of my grocery), olive oil, salt and pepper.

Clean your basil by rinsing under cold water and patting dry with a paper towel. Remove the leaves from the stem (it doesn't have to be pretty, I grabbed several leaves at a time and ripped them off). You'll need about 2 cups, loosely packed:

Peel 2 cloves garlic. Yes, it's really as simple as placing the clove on a hard surface and giving it a whack with the flat of your knife. Sometimes you have to whack it a little harder than others. Once the skin has a break, just peel it off:
Start with 1/4 C each pine nuts and shredded cheese. Pile everything into the food processor:
Top your ingredients off with 1/3 C olive oil and pulse until desired consistency.
Adjust ingredients according to your taste buds. I ended up adding 2 more (smaller) cloves of garlic, the remainder of the jar of nuts (about 1/3 C total, see picture above), another handful of cheese (again, about 1/3 C total), and an additional "glub" of olive oil. I also left mine on the chunky-ish side when pulsing as I don't like things overly liquified. This recipe makes 1 1/2 to 2 C pesto.
Transfer your pesto to a tupperware dish and pour a little more olive oil on top. Refrigerate and stir to combine when ready to use!

This pesto is tasty on just about anything! I top tortellini with it as a refreshing summer side dish. I also make the following recipe (mentioned above as a favorite of my MIL, who, by the way, hates to cook doesn't enjoy cooking nearly as much as I do!):

Baked Pesto Chicken

Preheat oven to 375.

Spread about half the pesto, as prepared above, in the bottom of a Pyrex dish (I use an 8x8 for three incredibly huge boneless, skinless chicken breasts). Pierce chicken with a knife and sprinkle with salt and pepper on both sides. Place chicken on top of pesto. Spread remainder of pesto evenly on top of chicken.

Cover dish with foil and bake until chicken is cooked through (start at 25 minutes, checking regularly).

Remove foil and sprinkle with reduced fat mozzarella cheese. Return to oven until cheese is melted, about 5 minutes.
