Steaks with Horseradish Sauce

I don't know any red-blooded American who doesn't love a good steak.  Especially my husband.  He's a meat and potatoes kind of guy, which tracks with his Midwestern roots.  I'm ok with that, because I love steak night!  We buy most of our meat at the military commissary, and the sirloins are good, but they're not great.  This horseradish sauce is just what the doctor ordered!  The spicy bite adds flavor and the creamy texture adds even more juiciness to the steaks.  Serve alongside some fabulous potatoes and a crispy salad (and a glass of red vino) and you've got yourself a perfect slice of Heaven!  I promise, you'll love this dish!

2 8-ounce sirloin steaks
Salt and pepper
2 tablespoons butter
2 tablespoons all-purpose flour
1 cups milk
1/4 cup horseradish sauce
1 tablespoons dried chives

Season meat with salt and pepper. Heat grill.  Grill steaks as desired.

While steaks are cooking, in a medium saucepan over medium heat melt 2 tablespoons butter. Combine melted butter with flour and cook a minute longer. Whisk in milk. Thicken milk to gravy consistency, then stir in horseradish sauce, chives and salt and pepper to taste. Transfer sauce to a serving dish.

Remove meat from grill and transfer to a platter.  Pour sauce over meat and serve hot.

Serves 2.
