South Beach Diet Individual Microwave Chocolate Cakes

In celebration of Valentine's Day, I thought you deserved a chocolate cake. However, my husband and I made a New Year's resolution that we'd only enjoy six real desserts this year, three of which being birthday cakes for each of us, and any other desserts had to be made with ingredients approved by the South Beach Diet. That meant that this challenge would have to be a "healthy" and South Beach-esque chocolate cake. Away to Google I flew and found this gem at Get Healthy with Heather! It's perfect for satiating that sweet tooth, and dainty enough for a romantic meal for two!

2 tablespoons whole wheat flour
2 tablespoons cocoa powder
2 tablespoons Splenda (or sugar/sweetener of your choice)
1/2 teaspoon baking powder
pinch of sea salt
3 tablespoons milk
1/2 teaspoon pure vanilla extract
dollop Cool Whip

Coat a 12 ounce mug lightly with oil spray.

In a small bowl (or your mug) mix together the dry ingredients. Stir in the almond milk and vanilla. Keep mixing until your batter is smooth – no lumps.

Pour into the mug and microwave on high for 1 minute. This could vary slightly based on the strength of your microwave, so check it a few seconds early. It is done when the center looks soft and cooked, but the outside edge looks like melted chocolate.

Top your cake with cool whip and dig in!
