Sand Dollar Cookies


Sorry folks, but this is a repeat, originally posted on...well, I don't remember, because I moved it over to this blog when I started it in October 2011.  Regardless, these cookies are super fun, super easy, and a perfect summer project with your kids (especially when those famous East Coast thunder storms roll through!).  So, back to the original post...

As the weather heats up, I thought I'd share some fun sun-shiney recipes!  I saw this creation in a cookbook I was browsing through at the gift shop where my mom works a few days a week and thought they'd be tasty and perfect for a summer picnic.  I don't remember the title of the book to give proper credit, unfortunately, so hopefully they don't come chasing after me for sharing their recipe!!

1 tube prepared sugar cookie dough (I used Pillsbury)
1 egg white, slightly beaten
cinnamon sugar
slivered almonds

Slice the cookie dough into 1/2 inch disks and place 2 inches apart on an ungreased cookie sheet (I found that this made unusually large cookies, so next time I may cut each disk in half and reshape so my cookies are still circular).  Brush the egg white over the top of each raw cookie using a basting brush.  Sprinkle cinnamon sugar over the egg whites.  Arrange five almond slivers on each cookie in a spoke-style, to resemble a sand dollar.

Bake according to package directions!
