Healthy Oven-Fried Chicken

I tried this recipe, adapted from the American Heart Association's website, as an alternative to traditional fried chicken for our 4th of July picnic and it was delicious!

6 boneless, skinless chicken breasts, all visible fat discarded
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon cayenne
1 teaspoon chili powder
1/4 teaspoon salt
pepper to taste
4 cups cornflakes, lightly crushed
2 medium garlic cloves, crushed
Vegetable oil spray

Preheat the oven to 350F. Lightly spray a baking sheet with vegetable oil spray.

In a small bowl, combine the spices and sprinkle on both sides of the chicken. Stir the cereal and garlic together in a pie pan and roll the chicken in crumbs to coat. Lightly spray the chicken on all sides and place on prepared baking sheet.

Bake 45-60 minutes, or until chicken is golden brown, tender, and no longer pink in the center.
